Update:
I forgot to mention I asked for a spirometry test when I was last at my Doctors, results came back today, I have been diagnosed with asthma lol (I think my dads house is the cause), so now it looks like I started hyperventilating due to asthma and aniexty which then lead to chronic hyperventilation combined with asthma, I get my pumps tomorrow, hopefully that’s whats causing the breathing problems :) .
Now just need to get this parathyroid crap sorted.
