Theoretically, it makes sense. But I’m careful to extrapolate from a very extreme situation, a diseases, to the functioning of a normal individual.
Im not an expert by any means, but without more evidence it could also be not that important of a factor.

I don’t have a good answer for you (based on studies), but if I were to guess I’d say a tablespoon of Knox gelatin a day is likely enough. Vitamin C is also very important (I prefer Ester C for bioavailability) since it’s a cofactor in collagen production. 650mg of Ester C is likely sufficient or 2000mg of regular vitamin C. Take these dosages with a grain of salt. There have obviously been no studies looking at this, but these would be reasonable dosages to start with.
